Spinach Quiche

    Ingredients:
    • 1 recipe pastry for a 9 inch single crust pie
    • 12 bacon, cut into squares
    • 1/2 cup shredded gruyere cheese
    • 1 cup frozen spinach, chopped
    • 1/3 cup minced onion
    • 3 eggs, beaten
    • 1 1/2 cups light cream
    • 3/4 teaspoon salt
    • 1/4 teaspoon white sugar
    • 1/8 teaspoon cayenne pepper

    Procedure:
    1. Heat up saute pan. Add sliced bacon and saute until fat is rendered. Add onions and saute until soft and translucent. add in spinach and cook for about 2 minutes. Turn off heat,  cool down and set aside.
    2. Combine beaten eggs, cream, salt, cayenne and sugar in a bowl.
    3. Place in pastry shell, the sauted bacon and spinach, grated cheese, and cream mixture.
    4. Bake at 375°F for 40 minutes or until brown
