- 1 recipe pastry for a 9 inch single crust pie
- 12 bacon, cut into squares
- 1/2 cup shredded gruyere cheese
- 1 cup frozen spinach, chopped
- 1/3 cup minced onion
- 3 eggs, beaten
- 1 1/2 cups light cream
- 3/4 teaspoon salt
- 1/4 teaspoon white sugar
- 1/8 teaspoon cayenne pepper
- Heat up saute pan. Add sliced bacon and saute until fat is rendered. Add onions and saute until soft and translucent. add in spinach and cook for about 2 minutes. Turn off heat, cool down and set aside.
- Combine beaten eggs, cream, salt, cayenne and sugar in a bowl.
- Place in pastry shell, the sauted bacon and spinach, grated cheese, and cream mixture.
- Bake at 375°F for 40 minutes or until brown
