Prosciutto Wrapped Asparagus

  • 12 asparagus spears
  • 6 prosciutto slices
  • Ghee for frying
  1. Wash your asparagus and trim 2 cm off the ends. Cut prosciutto strips into two halves lengthwise, this should give you 12 strips.
  2. Set each prosciutto strip on a cutting board at a 45 degree angle. Set one of the asparagus pieces on  the meat, perpendicular to it. The tip of the asparagus should be lined up with the bottom of the prosciutto strip. Wrap the bottom end of prosciutto over the asparagus and roll the asparagus up while holding the meat firmly. Since you angled the prosciutto it will wrap around the entire spear. Do not worry about covering the spears completely. 
  3. Heat up a small amount of ghee in a flat frying pan until it is sizzling hot. Fry up the wrapped asparagus spears for 1-2 minutes on each side it is done when the prosciutto is brown and crispy.
