Rich Asiago White Bean Dip

Asiago White Bean Dip! layered with caramelized onions & kept lean with greek yogurt!

  • 16 oz Cannellini Beans (White Beans)
  • 1 cup Shredded Asiago Cheese
  • 2 cups Diced Yellow Onion
  • ⅓ cup + 1 tbsp Plain Non Fat Greek Yogurt
  • 4 tsps Extra Virgin Olive Oil
  • 1½ tsps Crushed or Minced Garlic
  • 2 tsps Rosemary
  • ½ tsp Sea Salt & Coarse Black Peppercorn – approx.
  1. In large skillet saute onions in 2 tsps EVOO over medium high heat until lightly browned, ~8 mins. Remove from heat and set aside.
  2. As onions browns, in food processor combine white beans and greek yogurt, pulsing until smooth. Salt and pepper to taste, then add 2 tsps EVOO, ¼ cup asiago cheese, garlic, and rosemary, pulsing once more until well blended.
  3. Transfer white beans into shallow oven-safe dish, distributing evenly. Next, top with browned onions, then sprinkle with remaining cheese. Bake at 450F for 10 minutes until melted and bubbly, then immediately plate and serve, pairing with your choice of cracker or crudite.
