Baked Red Potato Chunks

Teaspoons of Truth: Baked Red Potatoes


- 1-2 lbs of small red potatoes, scrubbed/washed
- Italian seasoning
- Butter, melted
- Garlic, minced
- Salt
- Pepper

Directions:

1. Boil water in a saucepan over stove. Meanwhile, clean the potatoes. Once the water has boiled, place the potatoes in the saucepan and cook for about 25-30 minutes, or until cooked through. Strain the potatoes.

2. Preheat the oven to 425 F. Prepare a tray with foil for the potatoes.

3. Once the potatoes are cool enough to handle, cut them into small pieces. Spread them on the tray with the foil.

4. Drizzle the olive oil over the potatoes and mix it to cover all the potatoes.

5. Melt the butter and brush the potatoes with it.

6. Add the Italian seasoning, minced garlic, salt, and pepper.

7. Bake for about 30-40 minutes, or until the potatoes look crispy or golden brown.
