Ingredients
- 10 eggs, beaten
- ½ yellow onion, diced
- 1 ½ cups finely chopped broccoli
- 1 cup diced mushrooms
- 2 minced garlic
- Seasoning to taste
- 2 tablespoons coconut oil
- ¼ teaspoon crushed red pepper
- ½ cup chopped tomatoes
Instructions
- In a large skillet, heat oil. Once heated through, sauté onions until they caramelize.
- Stir in mushrooms and broccoli and sauté for 5 minutes longer until broccoli is soft.
- Add the remaining ingredients into skillet and cook until eggs are set and cooked.
